Savoury Bread and Butter Pudding with Ham and Tomatoes: A Delicious Breakfast from TM Rumyanets

The secret to a perfect start to the day is a hot and satisfying breakfast with a golden cheese crust. We invite you to turn yesterday's bread into a true culinary masterpiece in this savoury version of the classic British pudding. With minimal active preparation time, your kitchen will be filled with the aromas of garlic butter and baked cheese.

Ingredients:

  • 6 slices of toast bread (yesterday's or slightly dried bread works best)
  • 100 g ham
  • 12 cherry tomatoes (can be replaced with regular seasonal tomatoes)
  • 100 g Gouda cheese (or Cheddar or Mozzarella)
  • 500 ml milk
  • 3 eggs
  • 30 g butter
  • 1 clove of garlic
  • Salt and black pepper to taste

Method:

  1. Prepare the aromatic base. Preheat your oven to 180 °C. Crush the garlic with a press or chop it finely and mix it thoroughly with softened butter. Use part of this aromatic butter to grease a baking dish and spread the rest on the slices of bread.
  2. Shape the pudding. Cut the buttered bread in half diagonally to make triangles. Place them in the baking dish. Evenly distribute the washed cherry tomatoes and the ham cut into strips or cubes into the gaps between the bread.
  3. Make the delicate mixture. In a deep bowl, whisk the eggs with the milk. Add a pinch of salt and black pepper (remember that the ham and cheese already contain salt). Pour this mixture evenly over the filled bread and be sure to leave it for 5 minutes. This will allow the bread to absorb the liquid and prevent it from turning into mush during baking.
  4. Bake until golden. Grate the cheese coarsely and sprinkle it generously over the pudding. Place the dish in the oven for 35 to 40 minutes.
  5. Once the cheese has melted and the dish is covered with an appetising golden crust, the pudding is ready. Let it rest for 5 minutes before serving so the bake holds its shape better.
